Basic Pasta Dough

Serves: 12


  • 3 each eggs
  • 1/2 ounce olive oil
  • 1/8 ounce salt
  • 4-5 ounces bread flour


  1. Place the eggs, oil and salt in a mixing bowl. Mix well to combine the oil and eggs.
  2. Add about 1/3 of the flour and mix until it forms a soft dough.
  3. Gradually add the flour as you mix well, until the dough is dry to the touch and not sticky.
  4. Wrap the dough in plastic wrap and let rest for about 30 minutes.
  5. After the dough has rested, roll it out by hand or with a pasta machine until it is about 1/8 of an inch thick, cut by hand or with a pasta machine into your desired shapes. The sheets can also be used to make ravioli.
