Mini Meat Loaves

Ingredients:

  • 20 oz (w) 90% lean ground beef
  • 2 slices white bread, processed into crumbs
  • ½ medium yellow onion, diced
  • 2 oz parsley, chopped
  • 3 cloves garlic, minced finely
  • 2 oz ketchup
  • 1 egg
  • 1 oz milk
  • ¾ tsp salt and pepper
  • ¾ tsp Tobasco sauce
  • 1 oz ketchup
  • 1 ½ tsp brown sugar
  • 1 tsp dry mustard

Preparation:

  1. Complete mise en place. Preheat oven to 400° F. Line a 2" pan with foil.
  2. Combine in a bowl the breadcrumbs, onion, parsley, and garlic.
  3. Combine the ketchup, egg, milk, salt, pepper and Tabasco in a large bowl. Add the ground beef and the breadcrumb and onion mixture. Combine to make a smooth mixture.
  4. Form 6 small loaves into even rectangular shapes. Place on prepared baking sheet with 1" in between them. Combine the remaining three ingredients and spread over the tops of the meat loaves as a glaze.
  5. Bake for 20 minutes or until a meat thermometer comes out reading 165° F.

Notes

Depending on the size of the loaves that are shaped, the cooking time may take more or less time than the 20 minutes.
